Looking for delicious back to school snacks for your children? Then you'll want to try this yummy granola trail mix! It’s easy to make and can be customized to what your child's likes are.

The first few weeks of a new school year can be rough, as kids adjust to their new schedule. So they can be tired, cranky and hungry when they get home in the afternoon. This granola trail mix is the perfect pick-me-up!

It's made with wholesome oats, rice cereal, dried fruit, nuts and seeds, flavored with maple syrup and cashew butter, and has a little white chocolate thrown in to satisfy their sweet tooth. It packs a healthy energy punch to help them get through that afternoon slump.

This granola is totally customizable too! I mixed in rice square cereal with the oats, but you can use crisp rice cereal or oat rounds instead. Don't care for walnuts and sunflower seeds? Use pecans, cashews, peanuts or pumpkin seeds instead. Use honey and peanut butter in place of the maple syrup and cashew butter, and replace the dried cherries with raisins or cranberries.

The white chocolate chips are optional, so leave them out if you prefer, or use regular chocolate chips instead. Make this granola trail mix your own!

Granola Trail Mix Snack Packs


3 cups old-fashioned rolled oats
1 cup lightly crushed rice squares cereal
3/4 cups chopped walnuts
1/4 cup unsalted sunflower seeds
1/2 cup pure maple syrup
1/4 cup cashew butter
1 large egg white
1 teaspoon vanilla bean paste
1 cup dried cherries
1/2 cup white chocolate chips


Preheat oven to 300° F.
Line a large baking sheet with parchment paper or a silicone baking mat.
Toss the oats, cereal, walnuts, and sunflower seeds in a large bowl. Set aside.
In a medium heat-proof bowl, microwave the maple syrup and cashew butter for about 30 seconds. (you may melt these ingredients together in a small pan on the stovetop too.) Remove from microwave and stir together until everything is melted together and smooth. Allow to cool down for about 5 minutes, then whisk in the egg white and vanilla. (make sure the maple syrup mixture isn't hot, or it will cook the egg white!)
Pour over the oats mixture and toss to coat, making sure all of the oats are moistened.
Spread granola mixture onto the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes.
Remove from oven and allow to cool completely - the granola will obtain a crunchy texture as it cools.
Once cooled, toss in the dried cherries and white chocolate chips.
Pack into small plastic baggies and store in an air-tight container at room temperature. It will remain fresh for 2 weeks.

April's tip:
  • If gluten is an issue for you like it is for me, make sure to use certified gluten free oats to avoid cross contamination.
