It may seem far away, but Fall will be here soon! I know, it's hard to believe that the year is already half over. My two oldest grandchildren go back to school next week, so Fall is fast approaching. I don't mind at all because Fall is my favorite season, so I'm looking forward to it. I just don't like what comes AFTER it... winter. :(

WHY YOU NEED TO MAKE A CAST IRON SKILLET COOKIE:

  1. Skillet cookies are easier to make than regular cookies. It bakes up as one giant cookie, instead of multiple little ones that take forever to scoop out onto cookie sheets.
  2. Skillet cookies feed a crowd. This recipe makes an 8" cookie, which is perfect for my husband and I, or for a special treat when my grandchildren come for a weekend visit. If you want a larger cookie though, just double the recipe, and bake it in a 10" or 12" skillet. Adjust baking time accordingly. 
  3. Skillet cookies look super impressive, but they couldn't be easier to make. So surprise your kids with one to celebrate their first day back to school!

Caramel Apple Oatmeal Skillet Cookie

Ingredients

COOKIE
1 cup gluten-free rolled oats
1/3 cup gluten-free all-purpose flour (regular all-purpose flour may be substituted)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground allspice
3 tablespoon unsalted butter (I used vegan butter)
2 tablespoon cashew butter
1/4 cup light brown sugar
1 tablespoon maple syrup
1/2 teaspoon vanilla bean paste
1 large egg yolk
1 medium gala apple, cored, peeled and diced (place diced apple in cold water to prevent browning, while you prepare the cookie dough)
TOPPING
1 medium gala apple, cored and cut into slices
1 tablespoon butter
1 teaspoon light brown sugar
1/8 teaspoon allspice
Small pinch of salt
Caramel sauce
Chopped walnuts (optional)

Directions

Preheat oven to 350ºF and grease an 8″ cast iron skillet with butter. Set aside.
In small bowl whisk together oats, flour, baking soda, salt, allspice and nutmeg. Set aside.
In the bowl of an electric mixer, beat together the butter, cashew butter and brown sugar until light and fluffy. Add in maple syrup, egg yolk and vanilla bean paste, mixing until combined.
Add flour mixture to bowl and mix together on low speed. Drain diced apple well, and fold into the cookie dough.
Transfer batter to prepared pan and bake for 25-30 minutes, or until top is golden brown and a toothpick inserted in the middle comes out clean.
While cookie is baking, make the apple topping. In a skillet over medium heat add butter, sugar, salt, and apple slices. Stir occasionally until apples are soft, about 10 minutes. Remove from heat.
Allow cookie to cool at least 15 minutes or longer before serving, topped with sautéed apples, caramel sauce, and chopped walnuts if desired.

April's tip:

  • I topped my skillet cookie with sautéed apples, caramel sauce, and chopped walnuts. If you'd like to take it up a notch, serve it with a scoop of ice cream on top!
