This recipe was created for #SummerDessertWeek! I was sent samples by some of the sponsor companies, but as always opinions are 100% mine.

With petals that look like the suns rays, nothing says summer more than sunflowers. Since I love making cupcakes for summertime potlucks and family cookouts, I couldn't wait to combine the two and make sunflower cupcakes.

It's day five of #summerdessertweek and while there is one more day of desserts coming, this is my last recipe for the event. After making Summer Berries Pavlova Cake for day one, No Churn Dairy Free Vanilla Ice Cream for day two, and Peach Upside Down Cake for day four, I am finishing up the event with these cute and easy Sunflower Cupcakes.

Afraid of cake decorating? It couldn't be easier when using Wilton products. Trust me, I'm no cake decorator, so if I can do it, anyone can. Honestly, the hardest part was making the cupcakes, and even though they are gluten free, they aren't difficult at all and come out moist and delicious.

I decided to play around with the cupcakes, and use the fun colors Wilton sent me. (The Orange Creme Decorating Icing is soooo good, and reminds me of the creamsicles from my youth) So while my sunflowers aren't "traditional" looking, I still had a good time decorating them, and can't wait to experiment with cake decorating some more.

Sunflower Cupcakes


For the Vanilla Cupcakes
1/2 cup (8 tablespoons) unsalted butter, at room temperature (I used dairy free butter)
1 cup granulated sugar
1 large egg + 1 egg white
2 teaspoons vanilla extract
1 1/2 cups gluten free flour blend
2 tablespoons cornstarch
3/4 teaspoon ground psyllium
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup milk (I used cashew milk to make it dairy free)

To Decorate The Cupcakes
Wilton Orange Creme Decorating Icing (You may use your favorite buttercream icing tinted yellow or orange, with a star tip if you prefer)
Wilton Blue and Purple Sprinkle Mix


Preheat the oven to 325°F and line a 12-cup muffin tin with green paper liners.
To Make The Vanilla Cupcakes
Add the butter, sugar, egg, egg white and vanilla into a large mixing bowl, and beat together until well combined. Set aside.
In a separate bowl, whisk together the flour, cornstarch, ground psyllium, baking powder, baking soda, and salt until combined well.
Add the dry ingredients in 3 batches, alternating with the milk, beginning and ending with the dry ingredients. Beat lightly after each addition until just combined. Do not overmix. The batter should be light and fluffy.
Fill the prepared muffin tin cups about 2/3 full with the cake batter. Shake the tin back and forth to evenly distribute the batter in each of the cups. Place the tin in the center of the preheated oven and bake until cupcakes are very lightly golden brown and spring back when pressed lightly in the center (about 20 minutes). Don’t over bake. Allow the cupcakes to cool for at least 5 minutes in the tin before transferring to a wire rack to cool completely. Cool the cupcakes completely before frosting.
To Decorate The Cupcakes
Follow the directions on the icing package, then pipe a small circle of icing in the middle of each cupcake. Sprinkle the sprinkle mix onto the icing circles, pressing them gently into the icing so they stick.
On the outside edge of the cupcake, pipe a star border around the cupcake so it touches the sprinkles.
You now have beautiful and fun sunflower cupcakes!
