I found out a few months ago that I am allergic to milk, so sadly I had to give up cheese and one of my favorite desserts, ice cream. I used to love whipping up different flavors of no-churn ice cream using heavy cream and sweetened condensed milk. But now those ingredients are off limits…

But I can be pretty stubborn when I really want something, so I was determined to make a dairy free version of my favorite treat. After a few fails, I found out It wasn't that difficult really. All I had to do was swap my go-to dairy free alternative, coconut milk, for the heavy cream. The sweetened condensed milk was a little harder, but I eventually came up with a homemade coconut milk version, and dairy free ice cream was born!

Making the ice cream homemade was a necessity for me. I like to make as much of my food as possible myself, so I can control what ingredients are in it, as well as how much. Plus, have you seen the price of dairy free ice cream at the store? Nearly $7 in my area for one pint! That is crazy expensive and totally unnecessary, when you find out how simple and easy it is to make at home.

No Churn Dairy Free Vanilla Ice Cream

Ingredients

3 - 13.5 ounce cans coconut milk, 2 of them refrigerated for 24 hours
3/4 cup sugar
1 teaspoon unflavored powdered gelatin
2 teaspoons pure vanilla extract
Sprinkles for decoration

Directions

In a medium heavy-bottom saucepan, add the can of room-temperature coconut milk and sugar, whisking until well combined.
Cook over medium-high heat until it begins to boil, stirring occasionally. Once it begins to boil, reduce heat to medium and cook for 10 minutes, or until mixture is reduced by half and starts to thicken. Stir frequently during this stage to prevent scorching. You have now made sweetened condensed coconut milk! Remove pan from heat and allow to cool completely.
Carefully remove the other two cans of coconut milk from the refrigerator, without shaking or tilting them. Scoop out the solid coconut cream from the can, and discard the coconut water, or save for smoothies.
Place the solid coconut cream in a mixing bowl, and whip on high speed for about 2 minutes, or until light and fluffy and doubled in volume. Store in the the refrigerator while you proceed with the next step.
Add a couple of tablespoons of the cooled sweetened condensed coconut milk to a small bowl, and sprinkle with the gelatin. Stir until blended, then heat in a microwave in 5 second intervals, stirring after each time, until gelatin is dissolved. (this took me a total of 10 seconds) Add the gelatin mixture to the rest of the sweetened condensed coconut milk, and stir to combine. Add the vanilla and stir again to combine.
Remove the coconut whipped cream from the refrigerator and add the sweetened condensed coconut milk mixture. Stir until well combined.
Scrape ice cream mixture into a 2 quart freezer-safe container. Cover tightly and freeze until firm (4 - 6 hours). Remove from freezer 10 - 15 minutes before serving to make scooping easier.

April's tips:

  • Brands do matter when it comes to canned coconut milk. The cheaper ones are just that, cheap, and taste nothing like a good quality coconut milk does. Plus, the cheaper brands won't give you as much solid coconut cream once chilled. I have consistently good results with Imperial Dragon.
  • The gelatin gives the ice cream a creamy texture, and keeps it from being icy. So don't skip this important ingredient.
  • Letting the ice cream set at room temperature for 10 - 15 minutes makes it easier to scoop.
