I've been making Breakfast Cookies for quite a few years now. I made them for my children when they were in school, and now I make them for my grandchildren when they come over to spend the weekend with me. It always brings back fond memories when I see them enjoying those breakfast cookies, just as much as their parents did.

They think it's awesome that mamaw let's them eat cookies for breakfast, when mom and dad won't let them have "dessert" that early in the day.

I always just smile and say, "That's what mamaw's are for!" Little do they realize that what they're eating is actually pretty healthy, so I have no worries about serving them this special treat.

Getting back into a routine can be tough when a new school year starts. That's why it's a great idea to keep a stash of breakfast cookies on hand.

They're perfect for those mornings when the kids are running late, and don't have time for a sit-down breakfast. Just hand them a breakfast cookie or two, along with a juice box, as they run out to the waiting school bus. Then you'll be able to feel at ease knowing you gave them a healthy start to their day.

And the great thing about these cookies? They're freezable, so you can stock up and always have some on hand! Once the cookies are completely cool, just pop the baking sheet into the freezer until the cookies are frozen through, about 2 hours. Remove cookies from baking sheet, place them in a Ziplock bag, and store in the freezer for up to 2 months. To thaw, remove cookies from freezer and allow to sit overnight in the refrigerator.

Breakfast Cookies


1 1/4 cups "instant" oats (see tip below)
3/4 cup all-purpose flour (I used a gluten free flour blend)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1/3 cup honey
3 tablespoons cashew milk
2 tablespoons olive oil
1 teaspoon vanilla bean paste

Add ins:
1/2 cup dried cherries
1/4 cup white chocolate chips
1/4 cup unsalted sunflower seeds


Preheat oven to 350° F.
In a large bowl whisk together the oats, flour, baking powder, and salt. Set aside.
In a medium bowl whisk together the egg, honey, olive oil, and vanilla paste.
Pour egg mixture into oat mixture and stir together until well blended.
Fold in the dried cherries, white chocolate chips, and sunflower seeds until well incorporated.
Using a small ice cream scoop or 1/8 measuring cup, scoop out dough and drop onto a cookie sheet lined with a silpat mat or parchment paper. Slightly flatten the tops into desired thickness. The cookies will not spread in the oven.
Bake for 13-15 minutes or until edges are slightly brown, and cookies appear firm. Allow to cool on the cookie sheet for five minutes, then transfer to a wire rack to finish cooling completely.
Store in an air-tight container in the refrigerator for up to 5 days, or freeze for up to 2 months. Thaw before serving.

Makes 10 large cookies.

April's tips:

This recipe works best using "instant" oats. I prefer making my own using rolled oats. Just place the oats in a blender or food processor and pulse 5 or 6 times. Voila, instant oats!

  • Honey - Maple syrup
  • Olive oil - Any neutral flavored oil 
  • Vanilla bean paste - Vanilla extract
  • Cashew Milk - Any non dairy milk such as almond or soy
Ad Ins:
  • You can substitute an equal amount of any dried fruit, chocolate chips, nuts, or seeds
