I enjoy salads almost all year long, but when summer vegetables come into season, I can't get enough of garden fresh salads.

And does anything say summertime more, than fresh corn on the cob? This salad is bursting with fresh from the garden yumminess. Along with the corn it's loaded with tomato, bell pepper, cucumber, onion, and fresh basil, for an unforgettable salad. It's the perfect way to enjoy summer's garden bounty.

This salad is perfect for your summer cookouts and BBQ's. The beautiful colors will draw people in, and it's fresh, light taste will help balance out the heavier grilled main dishes.

Don't let the simplicity of this recipe fool you though. It is packed with flavor and seriously addictive. You wont believe how tasty it is.

Fresh Summer Corn Salad

Ingredients

2 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
1/2 teaspoon salt
Fresh ground black pepper to taste
4 ears of corn, shucked
1 cup halved cherry tomatoes
1/2 cup diced orange bell pepper
1/2 cup diced cucumber
1/3 cup diced onion
2 tablespoons chopped fresh basil leaves

Directions

In a small bowl whisk together the olive oil, lime juice, salt and pepper. Set aside.
Place corn in a pot of salted water, and bring to a boil. Cook for 5 minutes. Drain and cover with cold water. Once cool, cut kernels off cob and place in a bowl.
To the corn add the tomatoes, orange pepper, cucumber, onion, and basil. Drizzle with olive oil and lime mixture, and toss to coat.
Taste for seasoning and serve at room temperature, or chilled.

April's tips:

For a tasty twist, grill the corn instead of boiling it.

Want to make this salad your own? Vary the veggies used to suit your taste. Switch out zucchini for the cucumber, use green bell pepper instead of orange, substitute thawed and drained frozen corn if you can't get a hold of fresh, and to make this recipe even easier, use a store bought vinaigrette instead of the homemade olive oil and lime dressing.
