When my bloggy friends Sue of Palatable Pastime and Valentina of The Baking Fairy invited me to participate in their Earth Day Event, I signed up right away. I have a lot of food allergies and eat a mostly vegetarian diet, so I was excited to join in and spread awareness of eating sustainable foods.

What is sustainable food? It's good food that should be produced, processed, distributed and disposed of in ways that:
  • Contribute to thriving local economies and sustainable livelihoods 
  • Protect the diversity of both plants and animals and the welfare of farmed and wild species 
  • Avoid damaging or wasting natural resources or contributing to climate change 
  • Provide social benefits, such as good quality food, safe and healthy products, and educational opportunities

Sourdough Bread Salad, one of my favorite ways of using bread that is going stale, is a recipe that fits those guidelines perfectly. I make sourdough bread frequently for my husband and I. A friend of mine peaked my interest about making my own sourdough starter, and I never looked back. It creates it's own wild yeast, and makes some of the tastiest bread and pancakes I've ever eaten.

None of the bread goes to waste, because if there are a few pieces toward the end of the loaf that are going stale, I either turn them into bread crumbs, or toast them and use them in this delicious salad.

This salad is totally customizable. Add your favorite garden fresh vegetables, such as bell peppers or grilled zucchini if you'd like. Or for a boost of protein add some chickpeas.

Sourdough Bread Salad

Ingredients

1 tablespoon olive oil
1 teaspoon apple cider vinegar
salt and fresh ground black pepper to taste
1 cup lightly toasted and cubed sourdough bread
1 roma tomato, chopped
1/2 English cucumber, chopped
1/4 of a small sweet onion, thinly sliced
1 small clove garlic, minced
1 tablespoon of finely chopped basil

Directions

Combine the olive oil, vinegar, salt and pepper in a small bowl, and whisk to combine. Set aside.
Place the bread, tomato, cucumber, onion, garlic, and basil in a mixing bowl. Pour the olive oil and vinegar mixture over the salad, and toss to coat. Allow to set for 10 minutes before serving.
Serves one as a meal, or two as a side dish.
