Welcome to my first post for a fun monthly event called Food ‘n Flix. Camilla from Culinary Adventures with Camilla is hosting this month with her movie pick, Spinning Plates.

The idea behind #FoodnFlix is to create a yummy recipe, based off a movie the host chooses for that month. I really enjoyed it, and was able to watch a very intriguing movie named Spinning Plates, that I probably never would of picked to watch on my own.

It's a documentary about three extraordinary restaurants and the incredible people who make them what they are. Their unforgettable stories of family, legacy, passion and survival come together to reveal how meaningful food can be, and the power it has to connect us to one another.

Of course a movie about three restaurants, Alinea, a high-end restaurant in Chicago, Breitbach’s Country Dining, an American comfort food restaurant in Iowa, and La Cocina de Gabby, a struggling Mexican restaurant in Arizona, is going to show lots of food. But the one that caught my attention the most was La Cocina de Gabby. It's owned and run by Francisco and Gabby Martinez, a husband and wife who are raising a daughter and fending off foreclosure on their home, as they work hard to make their new restaurant a success.

The husband praises his wife's cooking skills throughout the movie, saying she can "Cook like an angel". One of my favorite moments is when Gabby says, "I could give you the recipes, but the true seasoning is in the person's hands". I've felt that way about cooking my whole life, but was never able to sum it up as well as she did. Gabby learned the art of Mexican cuisine from her mother and grandmother, which is why I think their story touched me the most. Her food is made with love, the same philosophy I have about my own cooking. (I even have it as part of my blog's name up above!)

Gabby, along with her husband, mother and sister, cook up lots of delicious Mexican recipes, such as tacos, burritos, skirt steak, chili rellenos, tamales, and stews, all homemade. But the food that caught my attention the most, was their breakfast tacos.

They are super easy to make, once you have all of the individual ingredients cooked. You just take a warm tortilla, and load it up! I don't know what it is about the tortillas, but it takes normal breakfast foods, and turns them into something extraordinary.

Breakfast Tacos


2 tablespoons sunflower oil
1 cup cubed potatoes
1/4 teaspoon salt
Fresh ground black pepper, to taste
6 eggs
1 tablespoon water
1/4 teaspoon salt
Fresh ground black pepper, to taste
1/2 roll breakfast sausage
4 tortillas, corn or flour
Optional toppings: shredded cheese (for a dairy free option sprinkle with a little nutritional yeast, which has a cheesy flavor), chopped tomato, chopped cilantro, and salsa.


Heat a large skillet with the oil over medium heat. Add the cubed potatoes, salt and pepper. Allow to cook for about 8-10 minutes, stirring occasionally, until the potatoes are cooked and slightly crispy. Remove potatoes to a bowl and set aside.
In the same skillet add the sausage and allow to cook, stirring occasionally, for about 5-7 minutes, or until browned and no pink remains. Move to a bowl and set aside. (Reserve a tablespoon or two of the sausage grease)
In a bowl whisk together the eggs, water, salt and pepper until well blended.
In the same skillet you cooked the sausage, heat up the reserved grease over medium heat, and pour in the egg mixture. Stir occasionally until the eggs are scrambled to your liking.
Wrap tortillas in a damp paper towel and microwave for 30 seconds to one minute.
To assemble Breakfast Tacos: Layer warm tortillas with potatoes, sausage and scrambled eggs. Top with your choice of toppings and serve.

April's tips:

Bacon may be substituted for the breakfast sausage in this recipe. Or for a spicy kick try chorizo.

To shorten the cooking time of the potatoes, scrub them clean under running water, then microwave on high for 3 - 4 minutes, or until slightly softened. Allow to cool a bit, then peel and cube the potatoes and proceed with the rest of the recipe.
