Lemon Cream Pie is a creamy, sweet/tart springtime treat. It's the perfect way to welcome Spring, after a cold and dreary Winter.

This post and recipe was created for #SpringSweetsWeek. I was sent samples by some of the sponsor companies, but as always opinions are 100% mine.

When a food blogger thinks of Spring, bright, fresh flavors, and vibrant pops of color come to mind. And what fruit encompasses all those things? Lemons of course! So I took those bright, fresh lemons and turned them into a smooth and creamy pie, filled with fresh, sweet/tart lemon filling, and nestled in a slightly crunchy/chewy, gluten-free crust.

Adams Extract - Spring Sweets Week

A big thank you to Adams Extract for making this recipe possible. I used their Pure Lemon Extract, which helped give the pie a delicious boost of lemon-y flavor.

I also used their Adams Food Coloring. Coconut sugar is my sweetener of choice in all my recipes, unfortunately it made the pie filling brown. But, I was able to save the day by using yellow food coloring to lighten it up. It gave it more of a butterscotch color, which was much prettier.

Even though the pie has a wonderful creaminess to it, I didn't use dairy. I used canned coconut milk instead. It's the perfect substitute when you follow a dairy-free diet.

I also made the crust gluten free by using crushed rice squares cereal, instead of graham cracker crumbs. It was my first time making it this way, and it was really tasty!

Lemon Cream Pie


2 cups crushed rice squares cereal
1/3 cup coconut sugar (white granulated sugar may be substituted)
1/3 cup melted coconut oil

1/2 cup cornstarch
1/2 cup coconut sugar
2 1/2 teaspoons unflavored gelatin (1 - 0.25 ounce packet)
1/4 teaspoon salt
1/2 cup fresh lemon juice (about 3 lemons)
2 - 13.5 ounce cans full fat coconut cream
1/4 teaspoon Adams Lemon Extract
6 - 10 drops Adams Yellow Food Color (if you use white granulated sugar, you won't need to use as much food coloring)


Preheat oven to 350 degrees F.
In a medium bowl mix together the crushed cereal, sugar, and melted coconut oil until thoroughly blended.
Using clean hands press the cereal mixture evenly over the base and up the sides of pie plate, to form a uniform crust.
Bake for 10 minutes, then allow to cool completely.
Store in refrigerator until ready to use.

Combine the cornstarch, sugar, unflavored gelatin, and salt in a saucepan.
Add lemon juice and coconut milk. Mix well.
Bring to a boil, stirring constantly, and boil for one minute, or until mixture starts to thicken.
Remove from heat and stir in lemon extract and food coloring. Pour filling into prepared crust. Allow to cool and set up in the refrigerator for at least three hours, or overnight.
Slice pie and serve topped with a little whipped cream if desired. (I used almond whipped cream)
Store any leftovers covered in the refrigerator.

April's tips:

Brands do matter when it comes to canned coconut milk. The cheaper ones are just that, cheap, and taste nothing like a good quality coconut milk does.

To make removal of the pie slices easier, set the bottom of the pie plate down into a bowl of hot water for 10 seconds. The slice of pie should then come out easily.
