Pumpkin Mug Cake

Nothing says Fall like pumpkin, so it's the perfect time to introduce you to one of my favorite Fall treats, Pumpkin Spice Mug Cake. I love pumpkin ANYTHING, but one of my absolute favorites is pumpkin cake. That sweet, cinnamon-y scent wafting through the house as it bakes is so intoxicating! But when that craving for some strikes, I'm not always in the mood for a big baking session. To the rescue? Mug cakes!



Pumpkin Spice Mug Cake

Mug cakes are my go to treat when I am craving something sweet. I've been enjoying different flavors of them since 2014 when I was going through my coconut flour phase, and came up with this tasty Cinnamon Bun Mug Cake. I now use organic flour, but they're no less yummy. In less than three minutes I can whip up a tasty dessert that will satisfy my sweet tooth, without making a mess in my kitchen. Win-Win!

I've tried quite a few pumpkin spice mug cake recipes, but after a lot of trial and error, I've come up with a winner. Soft, fluffy, moist and pumpkin-y, you'll quickly become addicted.

Pumpkin Spice Mug Cake

Ingredients
4 tablespoons all-purpose flour
2 tablespoons granulated sugar
1/2 teaspoon pumpkin pie spice
1/4 teaspoon baking powder
2 tablespoon pure pumpkin puree (not pumpkin pie mix)
2 tablespoons milk
1/2 tablespoon pure olive oil

Directions
With a fork thoroughly mix flour, sugar, pumpkin pie spice, and  baking powder in a mug.
Stir in the pumpkin puree, milk, and oil until blended and smooth. Pay special attention to the bottom of the cup so there are no dry ingredients left. Do not over-mix.
Microwave on high for 1 minute 15 seconds.
Top with whipped cream, or a scoop of vanilla ice cream if desired.

April's Tips
  • Microwave ovens vary and can impact the cooking time. For reference, ours is 1000 Watts and 1 minute 15 seconds is perfect. Start low and keep adding time to figure out the perfect formula for your microwave.
  • The type of mug you use can also impact the cooking time, as material and thickness impact the transfer of heat. So once you find a mug/cooking time that works, stick with it!
