If you're a regular reader of my blog, you know how much I love mug cakes. They are easy, quick, and super yummy, and the perfect solution when your sweet tooth strikes late at night.

What is a Mug Cake?

Healthier Chocolate Mug Cake

3 tablespoons all-purpose flour
2 tablespoons granulated sugar
2 tablespoons Barlean's Chocolate Silk Greens™ Powder
1/4 teaspoon baking powder
Pinch of salt
4 tablespoons milk
2 tablespoon pure olive oil

Place the flour, sugar, Barlean's Chocolate Silk Greens™ Powder, baking powder, and salt in a 12-ounce microwave-safe ceramic mug. Blend thoroughly with a fork.
Add the milk and oil and blend until smooth, paying special attention to the bottom of the mug. Do not over-mix.
Microwave on high for 1 minute 15 seconds. Do not overcook or the cake will be dry.
Let cool for one minute before eating.

April's Tips
  • Microwave ovens vary and can impact the cooking time. For reference, ours is 1000 Watts and 1 minute 15 seconds is perfect. Start low and keep adding time to figure out the perfect formula for your microwave.
  • The type of mug you use can also impact the cooking time, as material and thickness impact the transfer of heat. So once you find a mug/cooking time that works, stick with it!
