25+ Spring and Summer Salad Recipes

Last week I shared a collection of delicious salad options, that didn't contain any lettuce. And while I like to change my eating plan up and eat lettuce free salads, I do love my greens. That's why I've gathered 25+ Spring and Summer Salad Recipes to share with you today, that DO contain those leafy greens.

Lettuce is low in calories, and if you choose the right ones, they are loaded with nutrients. Iceberg lettuce has about 20% of your daily value of vitamin K, while Romaine lettuce has a whopping 80% of your daily value of vitamin A and 60% for vitamin K. Lettuce also gives us a nice dose of fiber. So a good rule of thumb to remember is, the darker the greens, think spinach and kale, the more nutrient dense it is.
