Peanut Butter Quinoa Protein Balls

Easy to make

These amazing little balls are made with just 4 ingredients, quinoa flakes being the star of the show, and require no cooking. So they're a snap to make! Quinoa flakes are an amazing find I stumbled upon recently as I was shopping for regular quinoa. The package said it could be used to make hot cereal like oatmeal, so I grabbed a box to try. When I realized they behaved similarly to oats, the wheels started spinning and Peanut Butter Quinoa Protein Balls were born.

Healthy and good for you

They have a deliciously strong peanut butter flavor, and are just sweet enough from a touch of honey, without being overpowering. They get a good dose of fiber from the quinoa, plus a boost of protein. The peanut butter gives it's own little shot of protein too, for a healthy and delicious snack you can feel good about eating. Then for the finishing touch, I added chocolate chips because my husband and I LOVE that peanut butter/chocolate flavor combo. We enjoyed how the chocolate chips harden up slightly once they have been refrigerated, which almost makes you think your eating a dessert! To keep them refined sugar free, make sure to use Enjoy Life Semi-Sweet Chocolate Chips, which are also gluten and dairy free.

Peanut Butter Quinoa Protein Balls


6 tablespoons peanut butter (I use natural peanut butter with only two ingredients, peanuts and salt)
3 tablespoons honey
1 cup quinoa flakes (I use Ancient Harvest)
3 tablespoons chocolate chips (I use Enjoy Life Semi-Sweet Chocolate Chips, which doesn't use refined sugar and is gluten free)


Place the peanut butter and honey in a medium sized bowl and stir to combine.
Add the quinoa flakes and blend together. (You'll need to do this with your fingers, a spoon won't mix it together properly).
Pour in the chocolate chips and mix them in, again using your fingers.
Divide mixture into 8 portions, and squash them into balls, using your hands to squeeze them together tightly.
Place in the refrigerator for 30 minutes or so to allow them to set.
Store in an air-tight container in the refrigerator for up to one week.

*While 1 ball may seem like a small serving, you get a good dose of protein in that little ball at 4.7 grams, and they really are filling. But, they also have 171 calories each. These are meant to give you a protein/energy boost, not to be used as a dessert, so eat in moderation.
