Raspberry White Chocolate Cheesecake #SixteenCheesecakes

Sweet-tart raspberries, mingle with luscious cheesecake, and creamy white chocolate, for an out-of-this-world pie that will have everyone asking for seconds.

Last year Camilla from Culinary Adventures with Camilla, gathered some blogging friends together to help her celebrate her 15th wedding anniversary. She originally was only looking for fifteen cheesecake recipes, but we wound up posting way more than #FifteenCheesecakes.

It was such a hit and we all had so much fun, that she decided to see if she could get enthusiasm for another round of cheesecakes. Yep. This is an encore performance by some of her favorite foodie bloggers. Welcome to this years More than #SixteenCheesecakes event!

This Raspberry White Chocolate Cheesecake isn't difficult to prepare at all, but it taste like you fussed. The only hard part is waiting for it to chill. :) I was taking this pie to a family gathering, so I took a few shortcuts to get it done quickly. I used a pre-made graham cracker pie crust, but if you have a bit more time, I highly recommend my Homemade Version. And to speed up the melting process of the chocolate, I used my microwave instead of the double-boiler method. The only thing I didn't take a shortcut with was the Whipped Cream. When it comes to that, I don't like to compromise. But you can certainly use an 8-ounce container of cool whip instead if you'd like.

Whichever way you make it, this is one amazing pie! Everyone at the family gathering enjoyed it, with a few grumbles that I served such small pieces. I wanted to get a fair taste test though, so everyone got a chance to try a bite. Lesson learned, next time I'll make two pies!

Raspberry White Chocolate Cheesecake
  • 1 graham cracker pie crust (store-bought or homemade)
  • 1 cup white chocolate chips, melted and divided
  • 1 to 1 1/2 cups raspberries, divided
  • 1 - 8 ounce package cream cheese, softened
  • 1 cup powdered sugar
  • 3 cups whipped cream (1 - 8 ounce container of cool whip may be used)
Spread 3 tablespoons of melted white chocolate over the bottom of the pie crust. Set aside 3 tablespoons of the melted chocolate to drizzle over the top.
Chop 1/4 cup of the raspberries and sprinkle over the white chocolate layer on the bottom of the pie. Set aside.
In a stand mixer bowl, beat the remaining melted white chocolate with the cream cheese until smooth.
Add powdered sugar and beat again until smooth.
Fold whipped cream into the cream cheese mixture by hand, until everything is fully incorporated.
Spoon filling into the crust, smoothing out the top with a spoon or spatula.
Place desired amount of raspberries on top of the filling, then place the remaining melted white chocolate in a small Ziplock bag. Snip off a small corner of the bag, and drizzle the chocolate over the top of the pie.
Refrigerate for at least 2 hours, or overnight before serving.
