Chili Cheese Potato Wedges

What do you get when you take slightly crispy on the outside, tender on the inside potato wedges, and blanket them in a thick and tasty chili sauce, and velvety smooth cheese sauce? Delicious Chili Cheese Potato Wedges!

One of my daughter's favorite restaurant foods is chili cheese fries. While I never ordered them myself, (not sure why), I always managed to snag a few bites of hers. I finally decided to try making them at home, and they turned out super tasty. From the thick and hearty chili sauce, velvety smooth cheese sauce, to the rustic, hand cut potato wedges, everything came together for one amazing dish. No wimpy little french fries here!

Don't let the thought of making homemade chili sauce and cheese sauce intimidate you. I promise the recipes are easy, and after tasting them, you'll never buy the canned stuff again. (Psst, the chili sauce is a great topper for hot dogs too).

This recipe makes some delicious potato wedges. My family couldn't get enough of them and wanted seconds. Lesson learned. I've made these quite a few times since, and I always make sure to cut up a couple of extra potatoes now, so there are plenty of extras.

Chili Cheese Potato Wedges
For The Potato Wedges
  • 4 large russet potatoes, rinsed well and cut lengthwise into 8 wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • Fresh ground pepper to taste
  • For The Chili Sauce
  • 1 pound ground turkey (Beef may be substituted)
  • 2 green onions, diced
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon oregano
  • 1 - 8 ounce can tomato sauce
  • 1 tablespoon brown sugar
  • Sea salt and fresh ground black pepper to taste
    For The Cheese Sauce
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheese (I like using a mix of Colby/Jack and Cheddar)
  • 1/2 teaspoon salt, or to taste
  • Fresh ground pepper to taste
For The Potato Wedges

Preheat oven to 400 degrees F.
Place potato wedges on a large baking sheet, that has been lined with a silpat mat, or parchment paper.
Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper.
Using clean hands, toss everything together until potato wedges are thoroughly coated.
Place pan in oven and bake for 20-25 minutes, or until potato wedges are golden brown, and pierce easily with a fork. (Turn wedges over, and give pan a half turn, halfway through the cooking time for even browning).

For The Chili Sauce

In a large skillet brown the turkey, onion. and garlic over medium heat. Cook until onions are softened and no pink remains, breaking meat up with a wooden spoon as it cooks.
Stir in the cumin and oregano and cook, stirring occasionally, for 2 minutes.
Add the tomato sauce and brown sugar, and stir to combine. Bring to a boil, cover, then reduce heat to a simmer.
Cook until thickened, about 15 minutes, stirring occasionally.

For The Cheese Sauce

Melt butter in a medium-sized saucepan, over medium heat.
Add the flour and cook for 60 seconds, whisking constantly.
Pour in 1 cup of the milk and whisk to combine. Once blended add the remaining cup of milk and whisk well.
Continue cooking over medium heat, stirring often, until mixture has thickened slightly.
Stir in the shredded cheese until melted, and remove from heat. Cheese sauce will thicken more as it sets.

To Assemble The Chili Cheese Potato Wedges

Arrange baked potato wedges on a serving platter.
Spoon chili sauce over the potato wedges, followed by cheese sauce.
Sprinkle with chopped green onion if desired, and serve immediately.
Serve any extra chili sauce and cheese sauce on the side, for those who would like a little more on their potato wedges.
