Homemade Chili

I grew up eating this chili often when I was a child, and continue to make it for my own family now. Especially during the cold weather months. This simple and easy chili was my mom's recipe, and I make it the same way today, with just a few minor tweaks. I've tried other chili recipes before, but none of them ever matched up to my mom's.

There are as many different ways of making chili, as there are cooks who make it. Some people can be down right passionate about it! But food is a personal preference, and not everyone will like something the same way I or someone else does. This is the recipe I was raised on, and to me is the best. It cant be beat as one of the easiest and most frugal chili's around.

Moms Homemade Chili

Ingredients
1 pound lean ground beef
1/2 cup chopped onion
1 can (16 ounces) kidney beans, drained
1 can (16 ounces) tomato sauce
4 cups beef broth
1 clove minced garlic
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon salt
8 ounces elbow macaroni {Optional-increase beef broth to 5 cups if you add macaroni to turn this into Chili Mac}

Directions
In a large skillet, brown onion with ground beef. Drain.
Add browned beef to a large soup pot, along with kidney beans, tomato sauce, beef broth, garlic, chili powder, cumin and salt.
Bring to a boil and add macaroni if using. Reduce to a simmer, cover and cook for 30 minutes, stirring occasionally.
Taste for seasonings and serve with your choice of toppings.

April's tips:
My family likes our chili mild, but you can certainly spice it up if you'd like. Add extra chili powder, cayenne pepper, chopped jalapeno peppers, whatever you like.

I usually serve my chili with saltine crackers, but it's equally good with a warm slice of Buttermilk Cornbread. This is comfort food at it's best.

This chili is even better the next day after the flavors have a chance to blend together!
